“Dark Summit” is Ransom's premium red wine and is named after a hill called Dark Summit, 297m above sea level. This is a Bordeaux Blend consisting of the following grapes Cabernet Sauvignon (53%), Carmenere (32%) and 5% each of Cab Franc, Malbec and Merlot.
A deep ruby or carmine (purplish red) in colour, with aromas of perfumed spices and dark spicy plums. In the mouth the wine feels soft and the tannins feel finely textured. The flavours in mouth are juicy fruits with an earthy/minerally finish that lingers. It is elegant and balanced (meaning the fruit, tannins, acid, alcohol and oak are harmonious).
Serve with at a special occasion dinner of eye fillet of beef or rack of lamb.
